dc.descriptionLa micotoxina DON es un tricoteceno, que pese a ser no cancerígeno, tiene unas implicaciones en la industria alimentaria que merecen ser objeto de estudio, en especial porque afecta ampliamente la producción de cereal y derivados que al ser consumidos por el ser humano o los animales, provocan una serie de problemáticas para la salud, leves como el vómito o la diarrea, o graves como la inmunosupresión o la muerte. La presente monografía reúne y expone de manera clara toda la información sobre el DON, explicando las formas de control que se han investigado, y mencionando la legislación internacional y colombiana que fija los límites mínimos permisivos del DON en aras de reducir su impacto social y toxicológico.
dc.descriptionThe DON mycotoxin is a trichothecene, non-carcinogenic, that has harmful consequences for the food industry: it affects the production of cereal and its derivatives causing several health problems when they are consumed by humans or animals, such as vomiting and diarrhea, or immunosuppression and death. This paper gathers and shows clearly all information about DON. It explains the ways of control that have been investigated, as well as it mentions the international and Colombian laws that set minimum permissive limits for DON in order to reduce its social and toxicological impact.
